		<description><![CDATA[It&#039;s a great question - sorry we weren&#039;t more specific. I assume that Vic was working with a cream sherry, as I believe those were most dominant in the American marketplace when this drink was invented. 

Modern bartender Martin Cate serves a version topped with Amontillado sherry which has been lauded by many. I&#039;d suggest trying it with either, and am really curious about the addition of Amontillado, as the flavor profile of that sherry is so unusual - it&#039;s nutty and aromatic with a dry finish, not what people typically think of when they think of sherry. Let us know what you go with!
